I’ve had a few Fantôme beers in my life, and they’ve always stood out to me for their uniqueness. There’s something wonderfully unpredictable about them. One of the last bottles I opened erupted all over my living room the moment I popped the cork, leaving Jackie and I with only the dregs to taste, but even that small pour left a lasting impression. Autumn Bridge is my nod to that spirit of wild character and complexity. It’s an amber, mixed fermentation saison brewed with Special B and Munich malt, then aged for six months in oak with our house culture and a touch of Brettanomyces Bruxellensis. The brett adds a depth that’s hard to describe, a gentle spice and earthy nuance that intertwines beautifully with the rich, toasty amber malt.
