Farewell Transmission began life as Scorpio Season, a 10% Vin de Grain brewed at the tail end of October. The wort was mashed through hay, an old technique we use to build structure while lending the beer a subtle, earthy grassiness. From there, it was coolshipped overnight before being transferred into one of our larger oak barrels, which we use much like a foeder, where it was left to slowly ferment and mature for eight months.
As the beer approached its final form, it was conditioned on fresh, hand-picked Magnolia flowers for three days, adding a delicate floral character that continues to unfold in the glass. As it warms, notes of soft florals and an almost cotton-candy sweetness begin to emerge. Finally, Farewell Transmission was bottle conditioned with local honey from the Mansfield region, adding another layer of complexity while giving the finished beer a gentle, natural carbonation.
