Keep For Your Records - 5.6%

In our exploration of what defines a Mixed Ferment Saison, I’ve been experimenting with different hopping rates to see how they influence the beer’s acidity. Keep For Your Records is a mixed ferment saison that leans more towards the traditional style. By increasing the bitterness to roughly 30 IBUs, I was able to tame our house culture, allowing more of the base beer to come through. Keep For Your Records is slightly sour, with bitterness to balance the acidity and a vinous quality to the mouthfeel. Brewed in October, it was allowed to cool in our coolship before conditioning for six months prior to packaging. Hersbrucker hops were used in the whirlpool to complement the subtle spiciness of the rye
