Long Exposure was an experiment with Foch grapes, a locally grown hybrid that resembles Gamay. I chose an extended maceration of four months to build structure and depth. The result opens with a bold nose of cassis, prune, and a hint of leather, followed by a more delicate palate that finishes with a firm, tannic grip.
The base wine was blended with the remaining portion of the farmhouse lager, as I wanted a neutral beer that wouldn’t interfere with the wine’s character.
