A year ago, I brewed a batch of spontaneous beer. Half was conditioned with spruce tips for Petrichor, the other with locally foraged lilacs. I wasn’t sure what I’d blend the lilac portion with, so I let it sit, knowing I’d find something.
In early July, I got some local strawberries and added them to the remainder of Keep For Your Records. Strawberries don’t need much time, just a few days to a couple of weeks. While they were conditioning, I revisited the lilac beer. One quick test blend and I knew it was the one.
Blended roughly 50/50, the strawberries shine up front, while the lilac lifts the finish with a gentle floral note. This beer is a perfect example of the sum being greater than its parts. Each component was good on its own, but together, they sing.
