Petrichor was brewed in August of last year on a rare cold day, so I decided to brew a coolshipped spontaneous beer. After primary fermentation was completed, I added spruce tips from our property and let the two meld for seven months. After conditioning, I blended the spontaneous spruce tip beer with a bright mixed ferment to highlight the citrus notes. Petrichor is a true expression of time and place, offering notes of lemon-lime, wet earth, and moss—a walk through a rainy forest. Close your eyes and be transported to your favourite forest getaway.
