Poetic Daydream is a blended mixed ferment saison, consisting of a neutral corn base mixed ferment conditioned with lemon verbena grown on our property, which had been conditioning for seven months. A rye coolshipped mixed ferment saison portion was brewed in October and aged for six months before being blended with the lemon verbena. The combination of the two creates a soft backdrop that allows the lemon verbena to shine. The house mixed culture amplifies the notes of lemon verbena, producing a beautiful harmony of slightly tart, herbaceous lemon, with a subtle touch of rye in the background.
