Split Season is a Bière de Coupage. I blended a clean, bitter saison, Whispering Dawn, with a spontaneously fermented saison, Fields of Gold. By blending in a portion of bitter, clean beer, it balances out the acidity and adds a nice bitter note. I find the blend really brings out the funk in the beer as it softens the acidity of Fields of Gold.
Both beers were brewed with raw oats and wheat straw from Good Family Farms. Bière de Coupage is an old technique used to blend down older, acidic beers with younger, hoppy beers in order to bring back some bitterness and hop character.
