When I think of a quintessential saison, what saison used to be, I think of Terms of Engagement. A beer with balanced acidity, a subtle hop profile, and just a touch of brett. Rustic at its core, but elegant in its subtleties. It’s our baseline, our jumping-off point, the foundation everything else builds from.
Not everything goes to plan. We had hoped to include this in our second box, hence the release code 003, but the beer took its time. I wasn’t happy with it in the bottle until much later.
Brewed in September with one-third raw spelt, Terms of Engagement was barrel fermented for six months with our house mixed culture, then bottled in March. It spent another five months conditioning, giving everything time to soften, meld, and allow some brett to express itself.
