Winona Crossing - 7.5%

At the start of October, we received Marquette grapes from a local winery in the Beaver Valley. We added the full-cluster grapes (grapes and stems) to a tank and purged it with CO₂. The grapes underwent a natural fermentation for a month before we topped them up with a neutral mixed ferment saison. After five months of contact time, the beer was blended with a balanced six month old mixed ferment saison and bottled to a high level of carbonation. 
The result is a lively, wine-forward beer showcasing notes of rosehip, blueberry, prune, black currant, and raspberry seed, with a nice tannic finish.
